16 Best Vegan and Vegetarian Lentil RecipesIn the last few weeks, I have posted a few of my favorite lentil recipes.  It made me realize that I needed to make a new “Best Ever Lentil Recipes” post. So here you have it!  These recipes highlight the 16  best vegan and vegetarian lentil recipes that I have experimented with.

Lentils are so healthy they should be considered a superfood. They are super fast and easy to make, which makes them a great option for busy cooks.  They are a great plant-based source of protein that work well in vegan and vegetarian dishes.

I love lentils and always have a few different types in the pantry.  The recipes below use red lentils, brown lentils, or black lentils, and have all been made by me more times than I can count.

I have more vegetarian lentil recipes that I love simply because I have a cheese addiction.  If you are looking for vegan lentil recipes, I have them seperated, but you may find recipes from the vegetarian list that you will still enjoy with a few simple vegan swaps.

  1. Your lentil quinoa meatballs were my first attempt at a vegan meatball. Now they are a staple. I went vegan at age 65 due to health ~ Your recipes are wonderful!
