Leftover Sweet Potato Recipes

Hi Friends!  I hope everyone in the states has enjoyed a wonderful Thanksgiving.  Todays collection of recipes is designed to help you use up some of your thanksgiving leftovers.  These leftover sweet potato recipes can use sweet potatoes in a variety of forms, from baked and  roasted to mashed.  Leftover russet potatoes can also be used for many of these recipes, as well.

Leftover Sweet Potato Recipes:

Sweet Potato Black Bean Chipotle Chili

Gluten free & Vegan | Use baked or roasted, adding them with only 15 minutes left to cook.

Cajun Black Eyed Pea Sweet Potato Cakes

Vegetarian | Use baked, roasted or mashed.  Mix in with cooked onions.

Chipotle Sweet Potato Lentil Taquitos

Vegetarian | Combine baked, roasted or mashed sweet potatoes with cooked lentils.

Cilantro Lime Sweet Poitato Black Bean Tacos

Vegetarian & Gluten free | Mix cubed baked or roasted sweet potatoes in with black beans and seasonings.

Moroccan Sweet Potato Millet Bowl

Vegan & Gluten free | Stir cubed baked or roasted sweet potatoes into this grain bowl.

Southwest Twice Baked Potatoes

Vegetarian & Gluten free | The original recipe uses russet potatoes, but sweet potatoes would work perfectly in this twice baked potato recipe.  Use leftover whole baked sweet potatoes or russet potatoes.

Kale and Potato Fritatta

Vegetarian & Gluten free | The orignal recipe uses russet potatoes, but cubed baked, or roasted sweet potatoes would be delicious in this fritatta.

Swiss Potato and Spinach Stuffed Mushrooms

Vegetarian & Glutenn free | Again, the original recipe uses russet potato, but sweet potato would be great as well.  Try a different cheese, such as sharp cheddar, to compliment the sweet flavor of the sweet potato.

Roasted Butternut Squash Chowder

Vegetarian & Gluten Free | Roasted sweet potatoes would make the perfect swap for butternut squash in this hearty chowder.  You could aslo try cubed baked for a less intese flavor.
