Kimchi and Fried Egg Sandwich

Kimchi and Fried Egg Sandwich by Alison's AllspiceThis kimchi and fried egg sandwich has been on my to-do list for a long time now.  And with good reason, it is Delicious (with a capital-D!), and soooo easy to make.

I have made it known that I love the combination of tangy kimchi with a runny egg yolk, like in this kimchi fried rice recipe.  I just can’t get enough!

I mean, when you’re eating something so good that you’re going back bite after bite after bite for more, the fact that it’s running all over your hands only makes it better.  It’s a joyful mess.

This joyfull mess is also as quick and easy to make as frying an egg.  While the egg cooks, arrange your sandwich with mayo, kimchi, and some lettuce.  Serve for breakfast, lunch or dinner, and don’t forget the napkin 😉

Tips and tricks for the Kimchi and Fried Egg Sandwich recipe:

  1. Check the label on your kimchi if you are a strict vegetarian.  Some brands use fish products, FYI.
  2. If you want the runny yolk, don’t walk away from the stove.  When I get busy doing too many things is exactly when I over cook my eggs (sad face).
  3. If you don’t want a runny yolk, try whisking the egg before pouring it into the skillet, then fold the cooked egg to fit on your sandwich.  No napkin required.

Serves: 1 sandwich
Ingredients
  • 1 egg
  • Splash olive oil
  • 2 slices bread (whole wheat prefered)
  • 2 TBS mayo
  • ¼ cup prepared kimchi
  • Lettuce, for serving
Instructions
  1. Cook the egg sunny side up in a small skillet with a splash of olive oil. Covering the skilllet with a lid will help the white to cook faster without over cooking the yolk.
  2. Toast your bread slices and spread them with mayo.
  3. Top with kimchi, lettuce, and the fried egg.
  4. Serve with a napkin.
