I love the combination of kale and potatoes in this frittata.  Potatoes make it hearty and filling, and kale adds nice color, as well as nutritional value!  Really any veggies will do, but this is my favorite, and I usually have the ingredients on hand. Continue reading

Italian Lentil and Quinoa Stuffed Peppers by Alison's AllspiceI have been going crazy over stuffed peppers recently.  The funny thing is, I didn’t use to like them.  In the past, I used bell pepper sparingly in meals so the flavor wasn’t strong.  I don’t know what caused the change in my taste buds, but I’m loving these Italian Lentil and Quinoa Stuffed Peppers!

Vegetarian Chili Taco Salad by Alison's AllspiceThis recipe is one of my all-time favorites that is in regular rotation at my house!  I serve this vegetarian chili taco salad with pickled jalapenos, and my homemade three bean chili.

Vegan Black Bean Beet Veggie Burgers by Alison's AllspiceBeet burgers have been on my to-make list for a long time.  I’m not a huge fan of beets, but these vegan black bean beet veggie burgers didn’t taste a thing like beets.  In fact, I think these will become my new go-to burger recipe!
