Bold Blue Cheese Vinaigrette

Bold Blue Cheese Vinaigrette by Alison's AllspiceFriends, today let’s talk about blue cheese.  I am a huge fan; I love the creamy texture and bold flavor. This bold blue cheese vinaigrette is vinegar and olive oil based instead of the standard creamy dressing.  It’s my favorite new way to do salads!

Vinaigrette is my favorite salad dressing, so it’s no wonder why I love this blue cheese vinaigrette.  I love the bold flavor of the vinegar, and I use a little more than other blue cheese vinaigrette recipes. My suggestions on changing that, next.

Lets talk for a minute about cooking and knowing your tastes.  I wrote this recipe for my tastes, and I love bold vinegar flavor in my dressing!  If you don’t, adjust your dressing to YOUR tastes.  This is the way we should look at every recipe.  Don’t make it the way I like it, make it the way you like it!

Maybe this means you have to try it my way first to figure it out.  No problem.  Taste test along the way as you make the dressing. This is a great recipe to practice that skill with because you can adjust it easily.

I used a mini food processor to make this dressing, but a blender or food processor would also work.  I prefer my mini processor because I think it does a better job with smaller volumes of liquid.

Last but not least, use a quality blue cheese.  I always used to by the cheap generic crumbles, thinking how could it be better?  IT REALLY CAN!  You will not be disappointed by purchasing quality cheese, I promise!

Variations to the Bold Blue Cheese Vinaigrette recipe:

  1. Warning! I like bold vinegar flavors in my dressing.  If you don’t, try a milder vinegar, such as champagne vinegar, or reduce vinegar to only 1/3 cup.
  2. I have forgotten to add the salt and pepper, and didn’t even notice.  That’s why I listed them as optional.  The blue cheese is already salty, and you can always add a little pepper to your salad!
  3. Serve over any kind of salad (not just the leafy kind)! I have used it on romaine and spinach, as well as broccoli and pasta salads!
Bold Blue Cheese Vinaigrette

Serves: 6-8 servings
Ingredients
  • ½ cup each: blue cheese crumbles, white wine vinegar, and olive oil
  • 2 garlic cloves
  • 1 TBS Dijon mustard
  • Salt and pepper to taste (optional)
Instructions
  1. Place all ingredients in a mini food processor, or other blending device.
  2. Process until almost smooth, leaving a few small chunks of blue cheese.
Notes
Vinaigrette keeps in the fridge for about 1 week in a sealed container.

      You totally should! It would work with other cheeses as well, like feta!
