Bold Blue Cheese Vinaigrette

Serves: 6-8 servings
- ½ cup each: blue cheese crumbles, white wine vinegar, and olive oil
- 2 garlic cloves
- 1 TBS Dijon mustard
- Salt and pepper to taste (optional)
- Place all ingredients in a mini food processor, or other blending device.
- Process until almost smooth, leaving a few small chunks of blue cheese.
Vinaigrette keeps in the fridge for about 1 week in a sealed container.
