Tahini Garlic Sriracha Noodles

Tahini Garlic Sriracha Noodles by Alison's AllspiceEvery cook has a back pocket recipe that they can whip up in no time that is delicious and satisfying.  For me, that has always been peanut noodles, until now.  Now that I have discovered tahini garlic sriracha noodles, I have a new go-to recipe!

Tahini Garlic Sriracha Noodles by Alison's Allspice Tahini Garlic Sriracha Noodles by Alison's AllspiceI saw the idea to swap tahini for peanut butter in a magazine.  My reaction was, why didn’t I think of that!  Well, I did think to pair it with the best hot sauce around, sriracha.

Add in a few other pantry ingredints such as garlic, use your favorite noodles, and top with crunchy veggies and you have a satisfying meal that anyone could eat.  It is dairy free, vegan, nut free, and gluten free when served over lentil pasta.

Variations to the Tahini Garlic Sriracha Noodles recipe:

  1. Use a trusted tahini.  Some tahini pastes can be bitter.  Use one you have tried and like.  I like East Wind brand.
  2. Noodle of choice: I have made this recipe with soba noodles, rice noodles, lentil spaghetti and whole wheat spaghetti.  It really goes with anything you might have in the pantry.
  3. Simple Swaps: Try ginger in place of garlic, lime juice in place of rice vinegar or coconut aminos or soy sauce in place of tamari.
  4. Veggies: I most often make this with cabbage because I almost always have some in the fridge.  Just about anything would work in it’s place.
  5. More servings: The recipe is writen for one serving, but you can easily adapt for the number you are feeding. All units are 1 or 2, so you can easily double, triple, or quadruple the recipe!

Ingredients
  • 2 oz whole wheat spaghetti or other noodle
  • 1 cup shredded or sliced vegetables (such as bell peppers, cabbage, broccoli, carrots, or edamame)
Sauce
  • 2 TBS tahini paste
  • 1 TBS each: reduced sodium tamari and rice vinegar
  • 1 garlic clove, minced
  • Sriracha to taste (1-3 tsp, starting with less)
Instructions
  1. Cook pasta according to package directions. Drain reserving ¼ cup pasta cooking liquid.
  2. Meanwhile mix together all ingredients for the sauce including tahini paste, tamari or soy sauce, rice vinegar, garlic, and sriracha. Taste test and adjust sriracha to taste. Mix in enough pasta cooking liquid to make a thin enough sauce to coat the pasta.
  3. Toss the sauce with the pasta and top with vegetables.
