1 cup shredded or sliced vegetables (such as bell peppers, cabbage, broccoli, carrots, or edamame)
Sauce
2 TBS tahini paste
1 TBS each: reduced sodium tamari and rice vinegar
1 garlic clove, minced
Sriracha to taste (1-3 tsp, starting with less)
Instructions
Cook pasta according to package directions. Drain reserving ΒΌ cup pasta cooking liquid.
Meanwhile mix together all ingredients for the sauce including tahini paste, tamari or soy sauce, rice vinegar, garlic, and sriracha. Taste test and adjust sriracha to taste. Mix in enough pasta cooking liquid to make a thin enough sauce to coat the pasta.
Toss the sauce with the pasta and top with vegetables.
