Smoked Trout Melts

Smoked Trout Melts by Alison's AllspiceCalling all trout fishermen and fisherwomen!  I have taken the classic tuna melt, and transformed it into a trout fishermans dreams, smoked trout melts.  It is ultra creamy, while still slightly smokey and sweet, and it’s ready for dinner in only 15 minutes!

I love to spend a whole day pulling out the smoker and loading it with trout and my homemade smoked tofu recipe, along with whatever else suits my fancy.  Smoked trout is a true delicacy, and I always make enough for plenty of leftovers! Continue reading

Salmon and Potato Au Gratin by Alison's Allspice My husband and I celebrated our first dating anniversary (many moons ago) at this little Scandinavian café at a vineyard that had a limited menu.  We both adore fish and tried the fish au gratin and fell in love with the dish!  Today I make salmon and potato au gratin at home for special occasions.

Au gratin is a special occasion dish as it is very rich, loaded with milk and cheese.  It is perfect for indulgent meals that you want to celebrate, including the holidays!  I have made it with both 2% milk and whole milk, and both work, but the whole milk is just a bit richer. Continue reading

Cherry Tomato Shrimp and Grits

Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!

I have also tried shrimp and grits with mushrooms and with red bell pepper.  Both were delicious in their own right, but the sweet cherry tomatoes really compliment the sweetness of the shrimp and the sweetness of the corn. Continue reading

The Cinnful Peach Habanero Jam is made with a vietnamese cinnamon that is quite different from the kind you might put into your favorite baked goods.  Peaches and ginger are a match made in heaven, and the spicy cinnamon compliments them both. Continue reading

Grilled Shrimp with Creamy Cocktail Sauce (Marie Rose Sauce) by Alison's AllspiceDinner at my house tonight is going to be grilled shrimp with creamy cocktail sauce!  The creamy cocktail sauce is a condiment from the UK also known as Marie Rose sauce.

I discovered this sauce/dip once when I was serving cold cocktail shrimp and totally overlooked the idea something to dip them in.  I went searching the internet for a simple dip that I could whip up from pantry ingredients and I have been making this sauce ever since! Continue reading

Brazilian Coconut Shrimp Stew

Brazilian Coconut Shrimp Stew by Alison's AllspiceThis Brazilian coconut shrimp stew is traditionally called moqueca.  It can be made with fish or various types of seafood.  I decided to try this dish because I loved the look of the creamy coconut with the rich seafood.

In my version I only used shirmp and not multiple types of seafood.  This simplified the dish to be something that I could make with mostly pantry staples and frozen shirmp. Continue reading

Baked Imitation Crab Chimichangas by Alison's AllspiceMy favorite local Tex-Mex restaurant has the most delicious seafood chimichangas that inspired me to make my own healthier version at home.  My baked imitation crab chimichangas are just as rich a creamy as well as easy on the wallet.

I tried many times to make seafood chimichangas with real shirmp and scallops.  Somehow I just could never nail the flavor.  When I tried them with imitation crab, I made a few more changes that also made them a tad healthier, and we love them! Continue reading
