Toffee Dark Chocolate Almond Clusters

Toffee Dark Chocolate Almond Clusters by Alison's AllspiceThere is a local bakeshop that makes the most delicious peanut clusters.  I decided that quarantine was the best time to try and make some myself!  Mine are different, but these toffee dark chocolate almond clusters are amazing!

I try to reduce added sugars in my diet wherever possible.  Therefore, dark chocolate is a better choice for me than milk chocolate.  Especially when I’m combining it with toffee, which is very sweet (and delicious!).

Toffee Dark Chocolate Almond Clusters by Alison's Allspice Toffee Dark Chocolate Almond Clusters by Alison's AllspiceI  also decided to swap in almonds in place of the peanuts. I already eat lots of peanuts, and the almonds larger size makes them a little bit more crunchy.

If you are trying not to grocery shop (yay quarentine!), but still want a sweet treat, totally go through your cupboard and make a variation to this recipe.  Check out my ideas below!

Variations to the Toffee Dark Chocolate Almond Clusters recipe:

  1. You can use any type of chocolate.  Dark, milk, semi-sweet, in chips or bars.  They will all melt and cool.
  2. You can use any type of nut.  Peanuts, almonds, pecans, or even mixed nuts!
  3. Try a different mix-in!  I don’t usually stock toffee pieces, so if I didn’t have them I might have tried some dried fruit, like cranberries or cherries!  Shredded coconut, pretzel pieces, or marshmellows could all be used as well. You could also go simple with just chocolate and nuts 😉

Serves: about 14 clusters
Ingredients
  • 10 oz bag dark chocolate chips or chunks
  • 1 cup dry roasted almonds, unsalted
  • ½ cup toffee pieces
Instructions
  1. Microwave chips in bowl for 20 seconds. Stir and repeat until almost all the chips are melted. Continue stirring to melt the last few chips. (if you microwave too long, you can easily burn the chocolate)
  2. Mix in almonds and toffee pieces. Stir to coat and drop spoonfuls of the almond mixture onto a parchment lined sheet. Sprinkle with extra toffee pieces, if desired.
  3. Cool until chocolate is hard.
