Asparagus and Corn Salad

For me it is partially nostalgic because I grew up eating fresh picked asparagus and now I grow it in my own garden as well. Asparagus lends itself well to many dishes.  Most often I eat it as a side dish, but it also works in pasta dishes and salads like this asparagus and corn salad.

This salad is also a side dish, but you could easily turn it into a simple meal by adding some protein, like canned chickpeas.

Asparagus and Corn Salad by Alison's Allspice Asparagus and Corn Salad by Alison's AllspiceWhen I made this salad, I decided to pair asparagus with corn because asparagus is earthy and the sweetness of corn balances it well.  Corn is not in season now, but it is readily available frozen, so it still makes a great choice.

Variations to the Asparagus and Corn Salad recipe:

  1. Swap sweet peas for all or part of the corn for a more spring-like version.
  2. Dijon helps to emulsify the dressing, and does add delicious savory flavor but can be omitted if you don’t like dijon.
  3. Swap the garlic for shallot if you prefer.
  4. Add feta cheese.

Asparagus and Corn Salad

Ingredients
  • 1 ½ cups asparagus, cut into 1 inch pieces
  • 1 ½ cups corn (thawed from frozen)
  • 2 TBS each: olive oil and white wine vinegar
  • 1 garlic clove, minced
  • ¼ tsp each: Dijon mustard (optional), salt and pepper
  • 2 TBS minced red onion
Instructions
  1. Steam asparagus until bright green on the stovetop or in the microwave. Mix it together with the corn.
  2. Mix together the olive oil, white wine vinegar, garlic, Dijon (if using) salt and pepper. Pour the dressing over the asparagus mixture.
  3. Garnish with the minced red onion.
