It’s Monday morning and it’s raining. Days like this really make you appreciate the weekend! The weather this weekend was beautiful and I managed to get outside to do some yard work. It has been a long spring for us in Southern Illinois, and I have been trying to soak up as much as possible before the summer heat sets in. I love watching football all season long. Football Sundays are cherished for us when the fall rolls around. It is special because there are so few games to the season, in comparison to other sports. Tacos are considered a kings food in my house. Tostadas are flat tacos, right? Well, not really. Tostada means “toasted.” It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference). Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table! Especially these avocado tostadas!

Refried beans are a simple staple that go into many recipes. Have you ever tried making homemade? You’ll be surprised at how simple it really is. And how good! I grew up with homemade refried beans, so the canned variety was never good enough. A lot of canned refried beans are not vegetarian either, and neither was my moms recipe, but that is the great thing about making homemade! You get to choose what goes into your food.
If you haven’t noticed yet, I post a lot of fish recipes using trout. That’s right, you guessed it. I am a trout fisherman… fisherwoman. That’s better. I always seem to have plenty of trout in my freezer, and sometimes I need to find creative ways to use it up so that I can plan more fishing trips!
Taco pizza is a total comfort food for me. I grew up in a small town where the only fast food was the local gas station that made pizza. We didn’t have take out pizza often, but it was always a treat. Taco pizza was always my favorite, so I created a taco pizza that is vegetarian to remind me of the old comfort food I grew up on.
