Easy Southwest Chopped Salad

Easy Southwest Chopped Salad by Alison's AllspiceI started making this easy southwest chopped salad for lunches last summer and it is still a favorite.  Although this salad requires a little chopping, I still consider it easy because I almost always have all the ingredients on hand.

Having a well stocked pantry makes it easy to whip up a good lunch without much pre-thought.  I use canned black beans, frozen corn, jarred jalapenos, bagged tortilla chips, hot sauce and bottled ranch.  I always have cabbage and onions in the fridge.  Therefore the greens are ususally the only thing I need to put on the grocery list! If you are not a gardener, the best place to look for green tomatoes is the farmers market.  Yes, the grocery store has them, but they tend to charge more for them as a specialty item.  Continue reading

Smoked Jalapenos in Carolina Mop SauceIf you have been a reader for very long, you have probably picked up on the fact that I love to eat smoked foods.  Which is sort-of different for someone that doesn’t eat meat (besides fish anyway).  I put this smoked tofu recipe into lots of dishes.  I love smoked trout, and use it in everything from salads, dip, sushi, and savory pancakes.  Well, here is another food I like to put on the smoker.  Smoked Jalapenos in Carolina Mop Sauce will blow your socks off!
