Thai Sweet Potato Soup

Thai Sweet Potato Soup by Alison's AllspiceI had a huge sweet potato crop in the garden this fall and I have been loving cooking with sweet potatoes all winter long. Soup season is just about over for me, so you should try this Thai sweet potato soup before spring weather sweeps us off our feet!

I almost always pair sweet potato with a spicy flavor.  Sweet and spicy are a perfect match and there are lots of ways to do it with sweet potatoes.  Usually I go with chipotle to add heat, but the red curry paste in this soup did a wonderful job as well. Continue reading

Creamy Roasted Garlic and Parmesan White Bean Soup

Creamy Roasted Garlic and Parmesan White Bean Soup by Alison's AllspiceAre you a smooth blended soup person, or a leave it chunky soup person?  For myself, I’m still deciding because this creamy roasted garlic and parmesan white bean soup is delicious both ways.

If I’m being honest, I usually serve this soup only half blended to get the best of both worlds.  The blended white beans become ultra creamy but a few chunks of veggies here and there make give it some texture. Continue reading

Smoked Tofu and Jackfruit Jambalaya

Smoked Tofu and Jackfruit Jambalaya by Alison's AllspiceThis smoked tofu and jackfruit jambalaya is the best jambalaya I have ever made.  Back when I used to eat meat, I ate traditional jambalaya at reastaurants but never tried cooking it.  Since, I have made many versions, some veggie, some with shirmp, and this recipe stands out as the clear winner.

I think this vegan version is outstanding no matter if you are a meat eater or not. The smoked tofu adds subtle smokiness that you would get from andouille sausage. The jackfruit replaces chicken, adding a nice chewy texture that also helps the dish stay moist. Continue reading

Vegetarian Black Bean Soup from dried beans

Vegetarian Black Bean Soup by Alison's AllspiceIs everyone else enjoying the fall weather?  I’m still adjusting to the cold this season, and a warm bowl of soup sure does help!  This vegetarian black bean soup is hearty and full of protein, perfect for cold nights.

My favorite thing to do with this soup is to spice it up!  I serve mine with an extra dash of hot sauce and fresh jalapenos. Continue reading

Easy Butternut Squash Soup with Coconut Milk

Easy Butternut Squash Soup with Coconut Milk by Alison's AllspiceI grow butternut squash in my garden because I love the fact that they last all through fall into winter.  I used home-grown squash in this easy butternut squash soup with coconut milk, and I could not get enough!

Usually, I use yogurt or cream to make a classic butternut squash soup to amp up the creaminess,  but I didn’t have any on hand.  Coconut milk is a common ingredient in butternut squash soup, but it is usually paired with curry spcies and the like, which is not what I was looking for. Vegan Okra Etouffee

Vegan Okra Etouffee by Alison's AllspiceEtoufee is one of my favorite comfort food dishes.  It occurred to me not long ago, that the only ingredient keeping my favorite etouffee from being vegan was the seafood.  Therefore, I decided to try vegan okra etouffee as a plant based version!

I chose to use okra to replace the seafood because it is traditional in Cajun cuisine.  I have seen variations that use chickpeas, but they don’t match the flavor and texture of the original dish, in my opinion. Continue reading
