Nut and Seed Burgers

Burger and FriesVeggie burgers are an easy and satisfying meal to throw together.  You can make them with just about any ingredient you already have.  Shredded veggies and grains are popular options.  My nut and seed burgers have grains along with many types of nuts and seeds making it rich with protein, not to mention flavor!

Nuts and Seeds for Nut and Seed burgers

Breadcrumbs, brown rice, and pecan meal make the base for these burgers.  If you can’t find pecan meal, use  a food processor to grind your own pecans.  I added sunflowers for texture, but you could also leave some larger pieces of pecans to add plenty of texture.  Peanut butter and egg hold this mixture together.  Check out my variations after the recipe.  Enjoy!

Veggie burgers are an easy and satisfying meal to throw together. I have included many types of nuts and seeds in this burger making it rich with protein, not to mention flavor!

Serves: 4-6 burgers
Ingredients
  • 1 cup pecan meal
  • 1 cup cooked brown rice
  • ½ cup sunflower seeds
  • ½ cup bread crumbs
  • ¼ cup flaxseed meal
  • ¼ cup nutitional yeast
  • ¼ cup parmesan, grated
  • ¼ cup peanut butter
  • 2 TBS ketchup
  • 2 tsp whole grain mustard
  • 2 garlic cloves, minced
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • 1 egg, beaten
  • 1 TBS olive oil
  • 4-6 whole wheat buns
  • Lettuce, for serving
Instructions
  1. Mix together pecan meal through salt. Taste the mixture and adjust seasonings accordingly. Mix in the beaten egg.
  2. In a large cast iron skillet, or other heavy bottomed skillet, add a splash of olive oil. Form the burger mixture into 4-6 patties(depending on your preference for size) and gently place in the oil. If your skillet is not large enough, cook in 2 batches, using a half tablespoon in each.
  3. Cook patties until golden brown, flip and repeat, cooking about 10-15 minutes total.
  4. Serve on whole wheat buns with lettuce.

Variations on the Nut and Seed Burgers recipe:

  1. Almond meal would work in place of the pecan meal, but is not as robust of a flavor, or grind 1 cup of your favorite type of nuts.
  2. Almond butter could substitute for the peanut butter.
  3. To make this recipe vegan, try using flax eggs, doubling the nutritional yeast, and omitting the Parmesan.
  4. Use your favorite type of mustard.  Dijon works well, as does roasted garlic mustard.
