Mushroom Farro Chili

Mushroom Farro Chili by Alison's AllspiceIt’s Superbowl weekend, and I cannot think of a better food to celebrate game day than a big bowl of hearty chili.  No two chili recipes are the same, and this mushroom farro chili is no different.  Meaty mushrooms and chewy farro take this veggie chili to the next level!

I made some variations to this chili recipe specifically because it incorporates mushrooms.  Mushrooms have a lot of umami (savory) flavor, so I wanted to overall flavor of the chili to be rich in umami as well. Continue reading

Spicy Lentil Soup with Coconut Milk

Spicy Lentil Soup with Coconut Milk by Alison's AllspiceLentils are seriously my favorite plant-based protein.  So versatile and inexpensive to boot!  Lentil soup is a classic way to prepare them, and I have yet to decide what my favorite lentil soup recipe is.  Maybe it’s because there are so many ways to make it, like this spicy lentil soup with coconut milk.

I made this soup spicy in three different ways.  First, I used red pepper flake early in the cooking process, so it had time to release its spicy flavors into the dish. Continue reading

Vegetarian Green Tomato Chili

Vegetarian Green Tomato Chili by Alison's AllspiceAt the end of gardening season, I was gifted a huge box of green tomatoes.  I love finding ways to use unsual ingredients, so I set to work making both new and old green tomato recipes.  This vegetarian green tomato chili is going to become a fall staple at my house, I loved it that much!

If you are not a gardener, the best place to look for green tomatoes is the farmers market.  Yes, the grocery store has them, but they tend to charge more for them as a specialty item.  Continue reading

Tomato Braised Tofu with Cilantro Lime Rice

Tomato Braised Tofu with Cilantro Lime Rice by Alison's AllspiceBefore I was born, my parents had a neighbor from Mexico that taught my mom a few traditional recipes that we enjoyed all throughout my childhood.  This tomato braised tofu recipe with cilantro lime rice is adapted from one that we simply called “Mexican Pork” where the pork is braised in a tomato sauce that is infused with traditional spices and aromatics. Continue reading

Cherry Tomato Stewed Butter Beans over Toast

Cherry Tomato Stewed Butter Beans over Toast by Alison's AllspiceAt the end of the gardening season, I am always bringing in loads of cherry tomatoes.  These little gems are such a treat because they are the sweetest tomato around.  I love turning them into rustic sauces, like I do in this cherry tomato stewed butter beans over toast recipe.

Butter beans are also known as lima beans.  They’re renaming is apt because these beans really do have a moist and buttery center.  You could also make this recipe with white beans, but don’t be intimidated by the large butter bean.  In my opinion, they are better! Continue reading

Cherry Tomato Shrimp and Grits

Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!

I have also tried shrimp and grits with mushrooms and with red bell pepper.  Both were delicious in their own right, but the sweet cherry tomatoes really compliment the sweetness of the shrimp and the sweetness of the corn. Continue reading

Smoked Tofu Vegan BLT

Smoked Tofu Vegan BLT by Alison's AllspiceThis smoked tofu vegan BLT is on regular rotation at my house!  It is one of my favorite ways to use my smoked tofu recipe; I think we have it every time I pull out the smoker!

This dish is hardly a recipe because a quality smoked tofu is all you need to make vegan bacon.  Just thin slice it and pan fry in some oil.  Your house will smell heavenly!  Continue reading

Greek Chickpea Salad

Greek Chickpea Salad by Alison's AllspiceFriends, it has been a very busy summer for me, and I hope you all have a summer full of great recipes so far. This recipe, Greek chickpea salad, is one that I have been eating a lot this summer.

This salad is very easy to make.  It requires a little bit of time to chop all the vegetables, but it is totally worth it.  The flavor of all the vegetables go together perfectly, and the dressing is the icing on the cake! Continue reading

Sweet Potato Coconut Curry

Sweet Potato Coconut Curry by Alison's AllspiceA few months ago, I posted this recipe for butternut squash chickpea curry.  One week when I was cleaning out the fridge, I used the recipe but made alterations based on what I had.  My family loved this sweet potato coconut curry even more than we loved the butternut squash version, so I just had to share it with you all!

So, what alterations did I make?  Two major swaps and one omission is all that you will find.  I swaped sweet potato for the butternut, and tofu for the chickpeas. Continue reading

Brazilian Coconut Shrimp Stew

Brazilian Coconut Shrimp Stew by Alison's AllspiceThis Brazilian coconut shrimp stew is traditionally called moqueca.  It can be made with fish or various types of seafood.  I decided to try this dish because I loved the look of the creamy coconut with the rich seafood.

In my version I only used shirmp and not multiple types of seafood.  This simplified the dish to be something that I could make with mostly pantry staples and frozen shirmp. Continue reading
