Healthy Greek Yogurt Ranch

Healthy Greek Yogurt Ranch by Alison's AllspiceThis healthy Greek yogurt ranch is better than bottled ranch for a wide variety of reasons. First of all, it tastes better! The yogurt and fresh lemon juice add tang that you would expect from a traditional buttermilk ranch and the fresh herbs have a distinctly bright flavor that you will never get in a bottle.

Beyond the amazing flavor, this recipe is very easy to make. Simply mix together all the ingredients! I almost always have a tub of Greek yogurt in the fridge, so if you are the same then all you need are the herbs.  Continue reading

Tofu Mushroom and Zucchini Kabobs with Creamy Chimichurri Sauce

Tofu Mushroom and Zucchini Kabobs with Creamy Chimichurri Sauce by Alison's AllspiceThe end of summer is upon us and it is very hot here.  That means grilling season is here as well! I love to grill when it is hot so that I don’t heat up the house cooking.  These tofu mushroom and zucchini kabobs with creamy chimichurri sauce make a great light meal for the hot weather too.

I loved the brightness of red wine vinegar and fresh herbs that are used in chimichurri.  It is traditionally paired with grilled meats, but is quite delicious with grilled vegetables and tofu. Continue reading

Baked Arugula Falafel

Baked Arugula Falafel by Alison's AllspiceI love falafel, and homemade falafel is easier to make than you might think.  This baked arugula falafel recipe is a great way to incorporate more greens into your diet, and it still tastes like falafel that you crave.

When I first tried this recipe, I really thought the arugula would make the falafel taste different from my favorite all-cilantro version of falafel.  The difference, however, was very subtle. Continue reading

Tomato Artichoke and Mushroom Rice Bake by Alison's AllspiceThis casserole-like tomato artichoke and mushroom rice bake recipe came about on Christmas day.   I was asked if I wanted to help cook, and of course the answer was yes.  I had been reading about some rice-based stuffing recipes somewhere and made this recipe on the fly with the ingredients we had on hand. Continue reading

Feta and Herb Coleslaw

Feta and Herb Coleslaw by Alison's AllspiceOne of the vegetables that I always have in my fridge is red cabbage.  It can add crunch and color to almost any dish, even as a simple side like this feta and herb coleslaw.

The sauce is blended up in the food processor, and you simply mix it with sliced cabbage.  This is a seriously easy side that takes almost no time or effort.  Continue reading

Grilled Eggplant and Herb Wrap

Grilled Eggplant and Herb Wrap by Alison's AllspiceHas everyone had a great summer full of grilling? I grill out every Sunday night.  This week, I made a grilled eggplant and herb wrap that is loaded with fresh flavor!

Are you a fan of eggplant?  It can be bitter, and salting the eggplant helps to remove those bitter flavors.  Also, the fresher the eggplant, the less bitter.

Some people are sensitive to eggplants bitterness, and others not.  Therefore, this may be a step you can skip if you don’t notice the bitter flavor of eggplant. Continue reading
