Mushroom Pecan Empanadas

Mushroom Pecan Empanadas 2Making food from scratch is often times more time consuming.  There are plenty of reasons to do it, however.  The first, and my personal favorite, is that making your own food allows you to control the ingredients used.  You can also make it exactly how you like it, and personalize it for others that you cook for.  This mushroom pecan empanadas recipe is time consuming, but totally worth the effort! Whole Wheat Naan Bread

Stack of Whole wheat naan

This recipe was inspired by my standard I can make that! attitude.  The local Indian restaurant makes delicious naan, and I just had to have some at home for when we make curry.  You can find naan at the grocery store, but it is just not the same as fresh.  We can’t have curry at home without whipping up a batch of this delicious naan! Roasted Root Vegetable Pockets with Goat Cheese

Root Vegetable pockets with spinach

Earlier this week I shared a recipe for Roasted Root Vegetables with Parmesan Wheat Berries.  We loved this combo of veggies with creamy cheese and nutty wheat so much that I found another way to enjoy those flavors.  These pockets are stuffed with lots of veggies, given a good smear of goat cheese, and topped with mustard-y glaze! Roasted Root Vegetables with Parmesan Wheat Berries

Root Vegetables plus Brussle Sprout

Roasted root vegetables are a wonderful staple of the season.  Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back.  I added one vegetable to this mix that is not a root vegetable: Brussels sprouts!  It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green! Football Food for Super Bowl Sunday

Football Food

I love watching football all season long.  Football Sundays are cherished for us when the fall rolls around.  It is special because there are so few games to the season, in comparison to other sports.  We huddle around the couch, spending time together enjoying copious amounts of football food! I love to experiment with all kinds of foods, finding the most fun and creative to eat for those special days!   Continue reading

Green Tomato Mince Pie

This was my favorite pie recipe as a kid.  Grandma told us kids that it was apple and raisin pie, because otherwise we (I) might not have eaten it!  Green tomato mince pie is different from most pie recipes because it has a tart tanginess that comes from the unripened tomatoes.  This pie is heavily spiced with cinnamon and allspice and is perfect for the holidays!Slice of Pie

Portabella and Lentil Pot Pie

It is raining and cold outside today.  A perfect day for a rich and warming comfort food like pot pies.  I loved pot pies as a kid, which is why I consider them a total comfort food.  This version is made with mushrooms and lentils to make it hearty and filling.  Veggies like potatoes and carrots make it classic.  It will even work well as a vegetarian main dish at thanksgiving, for all your veggie friends and family!

Smoked Tofu

This recipe has been ready for the blog for a long time, and it is finally here!  Tofu is not much by itself, it’s known for absorbing flavors well.  Smoking it adds immense flavors that go well into many types of dishes and turn boring old tofu into something special.  Buying smoked tofu from the store is expensive.  However, smoking it at home is really easy to do!
