Garlic Scape Sandwich SpreadAfter I signed up for my CSA, I was excited for weeks to pick up my first bag of produce.  Sometimes life can get a little crazy around here, however.  When the day came for my first pickup, I was at the mechanic and totally blew it off.  The kind folks that run the CSA called and told me I could pick it up at the farmers market that evening.  But as life goes, the market got rained out and they weren’t there when I got there.

It worked out beautifully that I was able to pick up my produce at the farm the next day.  I only wish I would have thought in advance to bring my camera to share some photos of the farm and all the vegetable growing with my readers… next time I guess.  Garlic scapes was included in my first couple of CSA pickups. This garlic scape sandwich spread recipe has been a real treat.  Garlic produces flowers as it grows and the scape is simply the flower before it blossoms.  It has a sweet earthy flavor with a mild garlic after taste.  This spread will be great on many types of sandwiches!Almonds and Garlic Scapes

Fresh Garlic Scape Sandwich SpreadVariations to the Garlic Scape Sandwich Spread Recipe:

  1. I used this spread on grilled cheese sandwiches.  It could go onto a veggie sandwich or wrap as well.  Try it on your favorite savory sandwich.
  2. I used almonds to give the spread some protein.  You can try any nut you like, or leave it out if you don’t need the extra protein.
  3. To make a vegan version, leave out the Parmesan, and increase salt to taste.

Serves: Spread for 7 sandwiches
Ingredients
  • 7 oz garlic scapes (about 20)
  • ½ cup almonds
  • ½ cup olive oil
  • 3 TBS lemon juice
  • ¼ cup Parmesan
  • Salt and pepper to taste
Grilled Cheese Sandwich with Garlic Scape Sandwich Spread
  • 2 slices sourdough bread
  • 1 TBS butter, softened
  • 1 oz mozzarella cheese, sliced
  • 3 TBS garlic scape sandwich spread
Instructions
  1. Combine garlic scapes and almonds in a food processor. Process until the scapes and almonds are chunky. Add the olive oil and lemon juice. Process until smooth. Mix in parmesan, salt and pepper.
  2. This makes enough spread for about 7 sandwiches.
Grilled Cheese Sandwich with Garlic Scape Sandwich Spread (1 serving)
  1. Spread the butter over the outsides of the bread slices. Smear the inside of one slice with the garlic scape sandwich spread.
  2. Heat a large heavy bottomed skillet over medium heat. Place the bread slice with the garlic scape sandwich spread butter side down in the skillet. Top with mozzarella slices and the second slice of bread, butter side up. Cook in the skillet until the sandwich is browned on each side, and the cheese is melted inside.
