Black bean tacos with garlic red cabbage slaw 2For a while, my family and I were hooked on my fish tacos recipe.  We would eat them every week.  I always had red cabbage in the fridge to top them with zesty slaw.  We are not tired of the fish tacos yet, but it is good to switch things up sometimes.  These black bean tacos with garlic red cabbage slaw are a regular in our rotation now.  They are perfect for summer because they don’t take much time to make, which leaves more time for fun! Fish Tacos with Pineapple Salsa

Fish tacos with pineapple salsa and red cabbage slawIt’s Monday morning and it’s raining.  Days like this really make you appreciate the weekend!  The weather this weekend was beautiful and I managed to get outside to do some yard work.  It has been a long spring for us in Southern Illinois, and I have been trying to soak up as much as possible before the summer heat sets in.  These fish tacos with pineapple salsa are a great refreshing dinner after spending the day in the sun! Avocado Tostadas

Tacos are considered a kings food in my house.  Tostadas are flat tacos, right?  Well, not really.  Tostada means “toasted.”  It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference).  Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table!  Especially these avocado tostadas!

Easy Guacamole

This recipe is my favorite.  I mean it, I am so excited to share this recipe.  Guacamole is something that should be easy to make.  And this recipe is delicious as well.  I made this recipe by testing time and time again, until I came up with the perfect combination.  I stock all the ingredients, except the avocado, in my pantry so I can whip it up at any time!
