Apple Cinnamon Quinoa Breakfast Bowls

Apple Cinnamon Quinoa Breakfast Bowls by Alison's AllspiceOne food type that I think people tend to overlook when it comes to breakfast is whole grains!  Cereals boast that they are made from whole grains, but how often do you cook your own for breakfast?  I think these apple cinnamon quinoa breakfast bowls will have you cooking grains for breakfast all the time!

I love loading this dish up with plenty of apples!  When you mix it all together, the apples get a crunchy coating from the quinoa, which adds a nice textural element to the dish.

Variations to the Apple Cinnamon Quinoa Breakfast Bowls recipe:

  1. Any color of quinoa will do.  I used red, but you could use white, or a blend of multiple colors!
  2. Try a different grain.  Oatmeal would be an obvious good choice for breakfast.  Try millet or bulgur  as well to keep the crunchy textural element of the dish.
  3. Be sure to rinse the quinoa well to remove any dirty or bitter flavors.  If the flavor of the quinoa is still too much for you or your family, try adding more cinnamon to flavor it!
  4. Don’t peel the apple!  The peel has lots of fiber and nutrients, so leave it on to increase nutritional value of this breakfast!
  5. Use butter in place of coconut oil if you don’t eat dairy-free or vegan.

These apple cinnamon quinoa breakfast bowls will have you cooking grains for breakfast all the time! This recipe is vegan, dairy-free and gluten free!

Ingredients

Single Serving

  • 1/4 cup quinoa
  • 1/2 cup water
  • Pinch salt
  • 1 small apple (5 oz)
  • 1 tsp coconut oil
  • 1/4 tsp cinnamon
  • Maple syrup, to taste (1-3 tsp)

4 servings

  • 1 cup quinoa
  • 2 cups water
  • 1/4 tsp salt
  • 4 small apples, or 2 large (20 oz total)
  • 1 TBS coconut oil
  • 1 tsp cinnamon
  • Maple syrup, to taste (1-4 TBS)

Instructions

  1. Rinse quinoa well in a fine strainer. Combine quinoa with water and salt in a rice cooker, or on the stove top. Cook until the water is absorbed and the quinoa is tender, 12-15 minutes.
  2. Meanwhile, core and slice apple(s). Melt coconut oil in a skillet, add the apple slices and saute until the apple starts to brown, stirring occasionally, about 5 minutes.
  3. Mix cinnamon into cooked quinoa. Place quinoa and sauted apples in a bowl and drizzle with maple syrup.
