Brazilian Coconut Shrimp Stew

Brazilian Coconut Shrimp Stew by Alison's AllspiceThis Brazilian coconut shrimp stew is traditionally called moqueca.  It can be made with fish or various types of seafood.  I decided to try this dish because I loved the look of the creamy coconut with the rich seafood.

In my version I only used shirmp and not multiple types of seafood.  This simplified the dish to be something that I could make with mostly pantry staples and frozen shirmp. Continue reading

First of all, I don’t mess around with taco seasoning packets.  I stock so many spices, there is no need!  Also, those packets have added ingredients that you don’t need.  Just keep a well stocked spice rack and you are set! Continue reading

Roasted Red Pepper Quinoa Salad by Alison's AllspiceRight now I am craving fresh summer produce!  Unfortunately, it’s just not here yet.  My pepper plants in the garden are still only 4 inches tall!  Therefore, I made this roasted red pepper quinoa salad using pantry staples instead.

Sweet Potato Black Bean Chipotle Chili by Alison's AllspiceThis year I tried growing sweet potatoes in the garden for the first time.  It was a success! Now I have a bowl full of sweet potatoes waiting for creative uses, like this sweet potato black bean chipotle chili!

I seriously loved this chili!  The sweetness of the potatoes, and the smokey chipotle really play well with each other. It is different than most chili recipes, which I love because it’s always good to switch things up. Continue reading

Vegan Okra Etouffee

Vegan Okra Etouffee by Alison's AllspiceEtoufee is one of my favorite comfort food dishes.  It occurred to me not long ago, that the only ingredient keeping my favorite etouffee from being vegan was the seafood.  Therefore, I decided to try vegan okra etouffee as a plant based version!

I chose to use okra to replace the seafood because it is traditional in Cajun cuisine.  I have seen variations that use chickpeas, but they don’t match the flavor and texture of the original dish, in my opinion. Continue reading
