Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!

The only downside to this recipe is that you cannot use canned chickpeas.  You must soak dried chickpeas for 8-24 hours, which requires some advanced planning. Continue reading

Are you a fan of eggplant?  It can be bitter, and salting the eggplant helps to remove those bitter flavors.  Also, the fresher the eggplant, the less bitter.
