Thai Sweet Potato Soup

Thai Sweet Potato Soup by Alison's AllspiceI had a huge sweet potato crop in the garden this fall and I have been loving cooking with sweet potatoes all winter long. Soup season is just about over for me, so you should try this Thai sweet potato soup before spring weather sweeps us off our feet!

I almost always pair sweet potato with a spicy flavor.  Sweet and spicy are a perfect match and there are lots of ways to do it with sweet potatoes.  Usually I go with chipotle to add heat, but the red curry paste in this soup did a wonderful job as well. Continue reading

Spicy Lentil Soup with Coconut Milk

Spicy Lentil Soup with Coconut Milk by Alison's AllspiceLentils are seriously my favorite plant-based protein.  So versatile and inexpensive to boot!  Lentil soup is a classic way to prepare them, and I have yet to decide what my favorite lentil soup recipe is.  Maybe it’s because there are so many ways to make it, like this spicy lentil soup with coconut milk.

I made this soup spicy in three different ways.  First, I used red pepper flake early in the cooking process, so it had time to release its spicy flavors into the dish. Continue reading

Coconut Turmeric Noodle Bowl with Tofu and Veggies

Coconut Turmeric Noodle Bowls with Tofu and Veggies by Alison's AllspiceThis coconut turmeric noodle bowl with tofu and veggies was inspired by golden milk, a creamy drink or tea made with a base of plant-based milk and turmeric.  I used the golden milk in place of broth to make a creamy noodle bowl that can be eaten hot or cold.

This isn’t a soup recipe because the ingredients are prepared individually, not together in one pot.  It resembles a buddah bowl more than it does soup. Continue reading

Sweet Potato Coconut Curry

Sweet Potato Coconut Curry by Alison's AllspiceA few months ago, I posted this recipe for butternut squash chickpea curry.  One week when I was cleaning out the fridge, I used the recipe but made alterations based on what I had.  My family loved this sweet potato coconut curry even more than we loved the butternut squash version, so I just had to share it with you all!

So, what alterations did I make?  Two major swaps and one omission is all that you will find.  I swaped sweet potato for the butternut, and tofu for the chickpeas. Continue reading

Brazilian Coconut Shrimp Stew

Brazilian Coconut Shrimp Stew by Alison's AllspiceThis Brazilian coconut shrimp stew is traditionally called moqueca.  It can be made with fish or various types of seafood.  I decided to try this dish because I loved the look of the creamy coconut with the rich seafood.

In my version I only used shirmp and not multiple types of seafood.  This simplified the dish to be something that I could make with mostly pantry staples and frozen shirmp. Continue reading

Butternut Squash Chickpea Curry

Butternut Squash Chickpea Curry by Alison's AllspiceCurry is a great dish to make in advance for busy nights because the flavors only get better as it sits.  This butternut squash chickpea curry is loaded with vegetables as well as flavor!

I like to prep all the ingredients for this recipe in advance to make it an easy and pleasant cooking experience.  Chopping the butternut squash can be time consuming, and sometimes difficult, so you don’t want to rush for safety’s sake. Continue reading

Chili Glazed Tofu with Pineapple Salsa and Coconut Rice

Chili Glazed Tofu with Pineapple Salsa and Coconut Rice by Alison's AllspiceI love all things spicy.  However, balance is also an important component to a great meal.  This chili glazed tofu with pineapple salsa and coconut rice has got it all!  Spicy tofu, cooling coconut and bright, fresh pineapple!

Coconut rice is a favorite side dish of mine because it pairs well with many things.  It’s also really easy to make, and is made from pantry staples like brown rice and coconut milk. Continue reading

Easy Butternut Squash Soup with Coconut Milk

Easy Butternut Squash Soup with Coconut Milk by Alison's AllspiceI grow butternut squash in my garden because I love the fact that they last all through fall into winter.  I used home-grown squash in this easy butternut squash soup with coconut milk, and I could not get enough!

Usually, I use yogurt or cream to make a classic butternut squash soup to amp up the creaminess,  but I didn’t have any on hand.  Coconut milk is a common ingredient in butternut squash soup, but it is usually paired with curry spcies and the like, which is not what I was looking for. Continue reading

Creamy Carrot Ginger Soup

Creamy Carrot Ginger Soup by Alison's AllspiceThis week, the temperatures here have been in the single digits (not as cold as many places, but still cold for us!).   When it’s cold outside, a nice warm bowl of soup is in order.  This creamy carrot ginger soup is what’s for dinner!

This soup is more filling than a traditional bowl of carrot soup.  It has a hidden ingredient that adds protein, and an extra layer of creaminess! Continue reading

Spiced Turmeric Tofu with Coconut Cilantro Rice

Spiced Turmeric Tofu with Coconut Cilantro Rice by Alison's AllspiceWhen I was prepping this recipe for the blog, I couldn’t decide if it should be two recipes or one.  In the end, I made it a single recipe for spiced turmeric tofu with coconut cilantro rice. The rice and tofu could be served separately, but they are awesome together!

I’m a huge fan of tofu, while most people are not.  I don’t know why, but I have just always loved it.  Even before going meatless I would seek out restaurants that had great tofu.  Continue reading
