Quick Vegetarian Red Curry

Quick Vegetarian Red Curry by Alison's AllspiceCurry is a staple dish in the vegetarian diet.  Curry simply means blended. Hence, most curry powders are a blend of spices and seasonings.  My quick vegetarian red curry uses garam masala curry powder.

Garam masala is a blend commonly used in Indian cuisine.  Northern Indian food seasons with dairy, while southern Indian food uses more coconut milk to flavor their curries.   Continue reading

Swiss Potato and Spinach Stuffed Mushrooms

Swiss Potato and Spinach Stuffed Mushrooms by Alison's AllspiceThis week I made these Swiss potato and spinach stuffed mushrooms.  I am an odd ball that loves to menu plan, but sometimes it’s hard to find new ideas to keep the menu interesting.

Stuffed mushrooms made a great option for the menu because new filling options are endless! Almost anything can be stuffed into a mushroom.  I particularly love swiss cheese and mushrooms.  Continue reading

Very Veggie Spinach Artichoke Calzones by Alison's AllspiceWho’s ready for some very veggie spinach artichoke calzones??  Me!  Me, please!

Calzones are usually loaded with (delicious, ooey-gooey, high fat, not good for my waist-line) cheese.  In my version, I loaded them up with veggies for guilt-free satisfaction. Continue reading

Butternut Squash Spinach Pie with an Almond Crust by Alison's AllspiceHave you ever tried a savory pie?  They make wonderful vegetarian main dishes for holidays that everyone can enjoy. This butternut squash spinach pie with an almond crust is loaded with veggies.

Eggs act as a binder to hold the veggies together, and add a little protein. The gluten free crust  is made with olive oil and almond meal, so it adds a little more protein as well. Continue reading

Creamy Spinach Artichoke Quesadillas

Creamy Spinach Artichoke Quesadillas by Alison's AllspiceThis week has been a very busy week for me (stories to come!), and has left me with little time to do my usual menu planning.  When dinner time came around the other night, I was scrounging through the fridge trying to come up with a plan.  I always start by looking at what vegetables I have, because I try to center my eating habits around getting plenty of veggies.  When I realized the best combo I had was spinach and artichoke, all I needed was cheese and a delivery system to make a meal.  I used my leftover spinach tortillas from my Zombie Burritos recipe to make these creamy spinach artichoke quesadillas! Slow Cooker Sweet Potato Paneer Curry

Slow Cooker Sweet Potato Paneer Curry by Alison's AllspiceI have a love hate relationship with curry.  On one hand, I absolutely love it.  It’s versatile, healthy and easy to make.  However, I don’t like most curry powders I have tried, taking curry from love to hate.  Instead, I make my own curry powder.  It requires stocking lots of spices to make my own blend.  The plus side is that I can vary the amount of each spice every time I make a batch so that the flavors vary each time.  No one curry dish will be the same as the next in my kitchen!  Check out my slow cooker sweet potato paneer curry where I tried using more whole spices! Small Batch Veggie Lasagna

Back when I posted my Lentil Loaf recipe I told you all that meatloaf was a favorite food of mine as a child.  Well, my other favorite food was lasagna.  Mom would always ask us what meal we wanted to have for our birthdays, and I always chose lasagna.  Now I make a veggie version, and I love this small batch veggie lasagna because it only makes 4 servings.  With only two of us in the house, we don’t have to eat lasagna until we are tired of it!
