Pizza Baked Potatoes

Pizza Baked Potatoes

I have a no waste attitude when it comes to food.  I hate throwing out even the littlest bit of food just because it doesn’t have a purpose, or because I think there isn’t enough left to use.  With a little bit of effort and planning you can prevent this kind of waste.  Today’s Pizza Baked Potatoes was created because I had a small amount of pasta sauce that was not going to go down the drain.  The recipe was so good that I made it multiple times and perfected the seasonings, and today I’m sharing it with you! Roasted Root Vegetable Pockets with Goat Cheese

Root Vegetable pockets with spinach

Earlier this week I shared a recipe for Roasted Root Vegetables with Parmesan Wheat Berries.  We loved this combo of veggies with creamy cheese and nutty wheat so much that I found another way to enjoy those flavors.  These pockets are stuffed with lots of veggies, given a good smear of goat cheese, and topped with mustard-y glaze! Root Vegetables plus Brussle Sprout

Roasted root vegetables are a wonderful staple of the season.  Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back.  I added one vegetable to this mix that is not a root vegetable: Brussels sprouts!  It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green! Trout Chowder

Chowder is the perfect soup for cold days.  We haven’t seen too much of winter here in southern Illinois yet, but the temperatures dropped this week, and it was time for chowder!  It’s creamy and filling and warming.  It will practically consume you with all of its comforting goodness.  Spoonful after spoonful.  Ready for chowder yet?

Portabella and Lentil Pot Pie

It is raining and cold outside today.  A perfect day for a rich and warming comfort food like pot pies.  I loved pot pies as a kid, which is why I consider them a total comfort food.  This version is made with mushrooms and lentils to make it hearty and filling.  Veggies like potatoes and carrots make it classic.  It will even work well as a vegetarian main dish at thanksgiving, for all your veggie friends and family!

Rosemary Roasted Potatoes

It’s finally November.  I have been reluctant this fall to get into the season.  However, Thanksgiving is on its way and it’s time to start testing recipes!  This recipe is a simple side dish that will do for Thanksgiving or Christmas.  Roasted potatoes are easy and delicious.  Adding rosemary adds a fresh element that works well with all your holiday dishes!

Roasted Potato and Trout Salad

I didn’t grow up eating a lot of salads.  But boy do I love them now!  Anything can be tossed together and called a salad.  This salad is traditional in the sense that I use greens to bulk it up.  Roasted potatoes and flaky trout make this dish incredibly filling, which is rare to find in a salad.  Pair it with the creamy dilled dressing and you have a winner!

Summer Roasted Vegetables

I know I said that I was going to embrace fall.  Yet here I am posting about summer vegetables…still.  At the farmers market this morning there were still so many yummy summer vegetables to enjoy, I couldn’t help myself!  There were a few butternut squash, but I have all winter to enjoy the long lasting squash (which is another great vegetable to roast, by the way).  So there you have it, summer roasted veggies with my special seasoning blend!

Bean and Potato Enchiladas

I love to make enchiladas because they are simple.  Simple ingredients and simple to prep.  All you have to do is make your filling, stuff tortillas, and bake!   Anyone can do that.  This recipe is made almost entirely out of my pantry staples.  It’s easy to add to the end of my weeks meal planning because I generally don’t need many ingredients.

Homemade Steak Fries

Everyone has a different opinion on fries.  Some like them crinkle cut, waffle cut, or even curly fries.  Shapes are nice.  Some like their french fries thin, like shoe string style.  Me, I like my french fries thick, like these steak fries.  The outsides are golden brown and crispy, the insides are moist and soft.
