Quick Pickled Red Onions by Alison's AllspicePickled peppers have long been a favorite of mine, its a true wonder as to why it has taken me years to try quick pickled red onions.  These pickled onions are the perfect toppers for sandwiches, tacos and more!

The recipe is pretty simple, sliced red onions and pickling brine. You can keep this recipe simple, as I have, or you can make additions to the pickling brine to make it your own. Continue reading

Sweet Potato Black Bean Tostadas

Sweet Potato Black Bean Tostadas by Alison's AllspiceI had 2 sweet potato plants in my garden this summer and I finally harvested them yesterday. It’s sad to see the garden finally be done for the season, but it is exciting to have a great sweet potato harvest this year to use in my sweet potato black bean tostadas!

I absolutely adore sweet potatoes in spicy dishes.  The sweet and the heat are made for each other!  In this dish I use red pepper flake to add plenty of kick. Continue reading

Homemade Red Wine Vinaigrette

Homemade Red Wine Vinaigrette by Alison's AllspiceThis homemade red wine vinaigrette is my go-to dressing for salads.  It only requires 5 ingredients, so it is really easy to keep everything you  need on hand.

I prefer my vinaigrettes to be very strong, and I wrote the recipe how I make it.  Traditionally, more olive oil is used which will reduce the vinegar-y-ness of the dressing.   Make it how you like it. Continue reading

Lentil Kale Fritters

Lentil Kale Fritters by Alison's AllspiceI came up with the idea for these lentil kale fritters when I was trying to find a new way to use up my copious garden kale.  Two packed cups of chopped kale is a lot of kale, but it cooks down so that it folds in with the lentils in a perfect 1:1 ratio.

These fritters don’t feel like you are eating tons of greens either thanks to the texture of the lentils.  The flavor it also bright and not too earthy thanks to the tomato paste, Dijon, parmesan and basil.  Continue reading

Tomato Braised Tofu with Cilantro Lime Rice

Tomato Braised Tofu with Cilantro Lime Rice by Alison's AllspiceBefore I was born, my parents had a neighbor from Mexico that taught my mom a few traditional recipes that we enjoyed all throughout my childhood.  This tomato braised tofu recipe with cilantro lime rice is adapted from one that we simply called “Mexican Pork” where the pork is braised in a tomato sauce that is infused with traditional spices and aromatics. Cherry Tomato Stewed Butter Beans over Toast

Cherry Tomato Stewed Butter Beans over Toast by Alison's AllspiceAt the end of the gardening season, I am always bringing in loads of cherry tomatoes.  These little gems are such a treat because they are the sweetest tomato around.  I love turning them into rustic sauces, like I do in this cherry tomato stewed butter beans over toast recipe.

Butter beans are also known as lima beans.  They’re renaming is apt because these beans really do have a moist and buttery center.  You could also make this recipe with white beans, but don’t be intimidated by the large butter bean.  In my opinion, they are better! Continue reading

Homemade Dehydrator Peach Leather

Homemade Dehydrator Peach Leather by Alison's AllspiceDo you remember those sugary fruit roll-ups that you might have eaten as a kid?  My homemade dehydrator peach leather is a healthy version of that snack that can be made with essentially only 1 ingredient!

I tested this recipe with and without sugar and found both versions to be delicious.  You don’t really need to add the sugar, but if your peaches are not very sweet, you may still want it. Continue reading

Cherry Tomato Shrimp and Grits

Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!

I have also tried shrimp and grits with mushrooms and with red bell pepper.  Both were delicious in their own right, but the sweet cherry tomatoes really compliment the sweetness of the shrimp and the sweetness of the corn. Continue reading
