Gouda and Smoked Tofu Grilled Cheese by Alison's AllspiceThis post is really more like an idea than a recipe.  Yes, the recipe for gouda and smoked tofu grilled cheese is written out in full below.  However if you know how to make a grilled cheese sandwich, then all you need to do is add some smoked tofu to have a hearty, cozy, and easy to make meal in only a few minutes.

The grilled cheese was one of the first things that I learned to cook.  I was just a kid probably getting in the way in the kitchen.  I imagine I was told to flip the sandwich while another was being made.

There are a million delicious add-ins to take your grilled cheese up a notch.  The smoked tofu in this recipe is chewy, filling, and the smoky flavor elevates the umami profile to the next level.

The other thing you can do to make your grilled cheese special is to use specialty cheeses.  I opted for gouda because the nutty flavor pairs perfectly with the smoked tofu and it melts well.

Variations to the Gouda and Smoked Tofu Grilled Cheese:

  1. Other cheeses that pair well with smoked tofu include aged white cheddar or a sharp yellow cheddar.  You could also try provolone or gruyere.
  2. Add some crunchy texture.  Try slices of apples or pears or a few onion slices.
  3. Add a flavorful spread such as pesto, jelly, Dijon or a garlic aioli.

Grilled cheese was one of the first meals I learned to make as a kid, and I still enjoy them. This version uses gouda and smoked tofu for a hearty dinner on a weeknight!

Serves: 2
Ingredients
  • 8 oz block smoked tofu, cut into 8 long strips
  • 4 slices bread
  • 4 tsp butter, softened
  • 4 slices gouda cheese (about 3 oz)
Instructions
  1. Heat smoked tofu strips in a skillet until just warmed through and starting to brown. Add oil to the skillet if necessary to prevent sticking.
  2. Spread butter on the outside of each bread slice to make two sandwiches.
  3. Place one bread slice buttered side down in a hot skillet. Top with a slice of gouda, four slices of smoked tofu, another slice of gouda, and finally the top piece of bread, buttered side up. Flip the sandwich when the bread is golden brown.
  4. Repeat with the second sandwich.
