Chipotle Butternut Squash Queso by Alison's AllspiceDuring football season, I am always challenged to come up with indulgent, cheesy finger foods that have a healthy twist.  I find that trying to make a snack healthy by reducing fat or other indulgent flavors usually makes it less exciting.  Instead I focus on adding something to the dish to make it more nutritious.  I use creamy butternut squash in this queso dip to add body and color, and mix in spicy chipotles and melty cheese to make it fun!  Try my chipotle butternut squash queso for your next game day! Creamy Spinach Artichoke Quesadillas by Alison's AllspiceThis week has been a very busy week for me (stories to come!), and has left me with little time to do my usual menu planning.  When dinner time came around the other night, I was scrounging through the fridge trying to come up with a plan.  I always start by looking at what vegetables I have, because I try to center my eating habits around getting plenty of veggies.  When I realized the best combo I had was spinach and artichoke, all I needed was cheese and a delivery system to make a meal.  I used my leftover spinach tortillas from my Zombie Burritos recipe to make these creamy spinach artichoke quesadillas! This week I have been having a lot of fun playing around with cracker toppings.  Bite size food has to be able to impress in that single bite, so you know the flavors have to be good.  Therefore, sampling all those flavors, such as my Banh Mi Crackers, has been a lot of fun, and delicious.  The Breton Crackers that I received samples of have been great.  I received the original flavor, which is quite tasty, and really  enjoy their light and crisp texture.  The size of the cracker is large enough to top with lots of veggies and smear with sauces, such as my Tzatziki Cucumber Dill Crackers. As a kid my family used to have snack nights.  In lieu of dinner, we would have a tray full of finger foods, usually loaded with crackers, cheese, and dips, as well as fruit and veggies.  When Breton Crackers sent me samples of their original crackers with tender-crisp texture and delicious flavor, I knew they would be perfect for snack night. Rhubarb Lime Sparkling Cocktail by Alison's AllspiceThis month, the recipe reduxers were challenged to make cocktails/mocktails!  This recipe challenge was entirely new to me.  I have never designed a drink – not one, not even a smoothie!!  I knew I wanted to use fresh fruit to create a great summertime sipper, so I started by doing my research on how to include it in a drink.  There were 2 obvious options, infuse the fruit in a simple syrup or into the alcohol.  I decided to infuse a simple syrup because it was a shorter and simpler task.  I tried this recipe with both raspberries and rhubarb.  Rhubarb was the clear winner, and the rhubarb lime sparkling cocktail was born!
