Butternut Squash Cheddar Cheese Sauce

This butternut squash cheddar cheese sauce can be used in a variety of ways.  Try it with broccoli, pasta, loaded baked potatoes, or as a dip for fries!

Ingredients

  • 4 cups cubed butternut squash (from a 1 lb squash, peeled)
  • 1 cup vegetable broth
  • 1/2 cup milk of choice (I used soy milk)
  • 1 1/4 cups cheddar cheese, shredded
  • 1/4 cup grated Parmesan
  • Salt, to taste

Instructions

  1. In a 2 quart sauce pan, cover butternut squash with vegetable broth. Bring to a boil, reduce heat, and simmer partially covered for 25-30 minutes.
  2. Stir in milk and puree the mixture with an immersion blender.
  3. Mix in cheeses and blend again until smooth.
  4. Taste test and add more salt as necessary.

Notes

This sauce freezes well. Freeze in small, 1 cup portions to make using it easy!
