This blackened tofu and peach salsa tacos recipe came about because I wanted to recreate a similar fish tacos recipe as a plant-based dish. The fish tacos used pineapple, but I decided to try fresh summer peaches with the tofu and it could not be more delicious!
I used fresh peaches from my local orchard and they are the most juicy and delicious peaches I have ever tasted. When I bought a big box of peaches I though there would be no way I would use them all up. I was completely wrong because these tofu tacos are so delicious we have been eating them on repeat!
These tacos have everything going in the flavor department. The blackened tofu is salty and spicy, the peach salsa is juicy and sweet, the cilantro lime crema is creamy and tangy. A tortilla for delivery and you have a homerun dinner!
Variations to the Blackened Tofu and Peach Salsa Tacos recipe:
- Make your own blackening seasoning with this recipe. It is best fresh, so use it up quickly by having tacos often!
- Add tomatoes, jalapenos, or ginger to the peach salsa recipe if you like.
- The cilantro lime crema can be made with all Greek yogurt if you prefer. I add mayo for a little richness. Sour cream can be substituted for the Greek yogurt as well.
- 8 oz block tofu
- 1 ½ tsp blackening seasoning
- 1 TBS avocado oil
- 1 large peach, diced
- 3 TBS minced cilantro
- 2 TBS diced red onion
- 2 garlic cloves, minced
- 2 TBS minced cilantro
- Juice of ½ a lime (about 1 TBS)
- 2 TBS plain Greek yogurt
- 1 TBS mayo
- 4 6-inch tortillas
- Gently squeeze liquid out of the tofu over the sink or a bowl until it reduces to a slow drip. Cut tofu into ½ inch cubes and toss with blackening seasoning. Heat avocado oil in a heavy bottomed skillet until shimmering. Add tofu and cook stirring occasionally until browned and crispy. Remove from heat.
- Meanwhile, mix together all ingredients for the peach salsa in a medium bowl.
- Mix together all the ingredients for the cilantro lime crema in a small bowl.
- Assemble tacos by layering blackened tofu, cilantro lime crema and peach salsa on tortillas.
