Dijon Thyme Roasted Cabbage

Ingredients
  • 3 cups cabbage, diced to about 1 in
  • 1 TBS olive oil, divided
  • ½ tsp thyme
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 cloves garlic minced
Vinaigrette
  • 1½ tsp Dijon mustard
  • 1½ tsp white wine vinegar
  • 1½ tsp olive oil
Instructions
  1. Preheat oven to 450°F.
  2. On a foil lined baking sheet, toss cabbage with half of the oil.
  3. Roast in the oven for 15 minutes. Remove and toss with remaining oil, thyme, salt, pepper, and garlic.
  4. Roast for another 5 minutes.
  5. Meanwhile whisk together the ingredients for the vinaigrette.
  6. Remove cabbage, toss with the vinaigrette and serve immediately, it looses its heat quickly.
Notes
I do not recommend trying this recipe with cabbage wedges. The wedges are difficult to cut because they will slide all over your dinner plate!
