Blackened Tofu and Peach Salsa Tacos

Ingredients
  • 8 oz block tofu
  • 1 ½ tsp blackening seasoning
  • 1 TBS avocado oil
Peach Salsa
  • 1 large peach, diced
  • 3 TBS minced cilantro
  • 2 TBS diced red onion
  • 2 garlic cloves, minced
Cilantro lime crema
  • 2 TBS minced cilantro
  • Juice of ½ a lime (about 1 TBS)
  • 2 TBS plain Greek yogurt
  • 1 TBS mayo
For Serving
  • 4 6-inch tortillas
Instructions
  1. Gently squeeze liquid out of the tofu over the sink or a bowl until it reduces to a slow drip. Cut tofu into ½ inch cubes and toss with blackening seasoning. Heat avocado oil in a heavy bottomed skillet until shimmering. Add tofu and cook stirring occasionally until browned and crispy. Remove from heat.
  2. Meanwhile, mix together all ingredients for the peach salsa in a medium bowl.
  3. Mix together all the ingredients for the cilantro lime crema in a small bowl.
  4. Assemble tacos by layering blackened tofu, cilantro lime crema and peach salsa on tortillas.
