Grilled Veggie and Halloumi Pitas

Ingredients
  • 8 oz block halloumi, sliced
  • 1 orange or red bell pepper, seeds removed
  • ½ medium onion, root intact
  • 1 medium zucchini, thinly sliced
  • Splash olive oil
  • ¼ cup whole grain mustard
  • 2 TBS mayo
  • 1 TBS red wine vinegar
  • ¼ tsp salt
  • 2 whole wheat pita, cut in half and opened into 4 pockets
  • 1 tomato, sliced
  • 4-6 leaves of romaine, rib removed, torn into large pieces
Instructions
  1. Set up a charcoal grill and preheat the grill grates.
  2. Toss halloumi, bell pepper, onion, and zucchini in a splash or two of olive oil. Grill on the hot grill until charred on both sides. Warm the pita on the sides of the grill off of direct heat.
  3. Mix together mustard, mayo, red wine vinegar, and salt. Set aside
  4. Chop the onion, removing the root, and slice the pepper.
  5. Assemble the pita by spreading each half with mustard mixture. Add chopped grilled onion, sliced grilled pepper, grilled zucchini slices, sliced tomatoes, and sliced grill halloumi. Slide a few pieces of romaine in on the side.
