Cinnamon French Toast with Apples

Cinnamon french toast with apples is a great way to start any fall day. Dig in!

Ingredients
Apples
  • 1 large sweet apple, peeled and thinly sliced (pink lady, braeburn, gala etc)
  • 1 TBS butter
Toast
  • ½ cup soymilk (or milk of choice)
  • 2 large eggs
  • 1½ tsp sugar
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • 6 slices bread (I like sourdough or italian)
Instructions
  1. Saute the apple slices in butter over medium high heat until starting to brown. Remove from heat and set aside.
  2. Preheat a griddle or large pan. Grease the pan to keep toast from sticking.
  3. Whisk together milk through cinnamon in a shallow dish.
  4. When the griddle sizzles with a splash of water you are ready to start cooking. Coat both sides of a slice of bread in the milk mixture and place onto the hot griddle. Flip after 1 minute, or when it starts to brown, and cook the other side.
  5. Continue until all the bread slices and coated and cooked. Serve with apples and maple syrup.
