1 tsp each: salt, garlic powder and smoked paprika
¼ tsp red pepper flake
¼ cup dry white wine
28 oz can fire roasted diced tomatoes
6 cups sliced or chopped green cabbage, from about ½ a medium head
1 large sweet potato, ½ inch cubed
15 oz can white beans
4 cups vegetable broth
Instructions
Saute the onion, celery, and carrot in olive oil over medium low heat until it starts to caramelize, about 15 minutes. Stir in the garlic, garlic powder, Italian seasoning, smoked paprika, salt, and red pepper flake. Saute 1 minute to toast the spices. Deglaze the pan with the dry white wine.
Mix in the tomatoes, cabbage, sweet potato, white beans, and broth. Bring to a boil and simmer for 20-30 minutes, or until the potato is tender.
