Garlicky Kale Caesar Pasta Salad

Ingredients
Salad
  • 6 oz penne pasta (whole wheat or chickpea)
  • ½ tsp garlic powder (or more to taste)
  • 6 loose cups massaged curly kale
  • 1 ½ cup sliced red cabbage
  • 3 TBS shredded vegetarian parmesan
Dressing
  • ½ cup mayo or vegan mayo
  • 2 garlic cloves, minced
  • 1 TBS lemon juice
  • 1 tsp Dijon
  • ½ tsp vegetarian Worcestershire sauce or anchovy paste
  • ¼ tsp each salt and black pepper
  • 2 TBS grated Parmesan (optional)
Instructions
  1. Cook pasta according to package directions. Rinse it under cold water and toss it with the garlic powder.
  2. Meanwhile, combine all the ingredients for the dressing. Set aside.
  3. Combine pasta, kale and cabbage in a bowl. Add the dressing and toss to coat. Sprinkle with the shredded parmesan.
