Cherry Tomato Stewed Butter Beans over Toast

Ingredients
  • 2 TBS butter or olive oil, divided
  • 2 garlic cloves, minced
  • Red pepper flake, to taste
  • 2 cups cherry tomatoes, halved (from 1 pint)
  • 15 oz can butter beans, drained (1 ½ cup cooked lima beans)
  • ½ tsp dried basil
  • Salt and pepper to taste
  • 2 TBS dry white wine
  • 4 slices quality crusty bread
  • Grated Parmesan, for serving (optional)
Instructions
  1. Melt 1 TBS butter in a skillet, or use olive oil. Add garlic cloves and red pepper flake and saute for about 1 minute, or until the garlic just starts to turn golden.
  2. Mix in cherry tomatoes, butter beans, basil, salt, and pepper,. Cook until the tomato starts to break down.
  3. Mix in the dry white wine and cook until the sauce is reduced and very thick.
  4. Toast the bread and spread with remaining butter, or a drizzle of olive oil.
  5. Serve the toast topped with the butter bean mixture and grated parmesan (optional).
