Greek Chickpea Salad

Serves: 2 lunches or 4 sides
Ingredients
  • 15 oz can chickpeas, drained
  • 1 small cucumber, diced (or ½ a large cucumber)
  • 1 medium tomato, diced
  • ¼ cup diced red onion (optional)
  • 2 garlic cloves, minced
  • ¼ cup crumbed feta
  • ¼ cup sliced black olives
  • 2 TBS olive oil
  • 2 TBS red wine vinegar
  • 1 tsp Dijon mustard
  • ¼ tsp each: salt and pepper
Instructions
  1. In a bowl, mix together chickpeas, cucumber, tomatoes, onion (if using), garlic, feta and black olives.
  2. In another small bowl or liquid measuring cup whisk together the olive oil, red wine vinegar, Dijon, salt and pepper.
  3. Pour dressing over chickpea mixture and toss to coat. Serve at room temp or cold.
