Feta and Dill Crusted Trout

Serves: 2-4 servings
- 4 skin on trout fillets
- ⅓ cup panko
- ¼ cup crumbled feta
- 1 TBS whole grain mustard
- 1 TBS avocado oil
- ¼ tsp dried dill or 1 TBS fresh
- ¼ tsp garlic powder
- Salt and pepper to taste (about ⅛th tsp each)
- Preheat the oven to 450 F.
- Mix together panko, feta, mustard, oil, dill, garlic, salt and pepper.
- Place the fish on parchment lined baking sheet and press the panko mixture on top.
- Bake in the preheated oven for 15 minutes, or until the fish is opaque and flaky, and the topping is starting to brown.
