Feta and Dill Crusted Trout

Serves: 2-4 servings
Ingredients
  • 4 skin on trout fillets
  • ⅓ cup panko
  • ¼ cup crumbled feta
  • 1 TBS whole grain mustard
  • 1 TBS avocado oil
  • ¼ tsp dried dill or 1 TBS fresh
  • ¼ tsp garlic powder
  • Salt and pepper to taste (about ⅛th tsp each)
Instructions
  1. Preheat the oven to 450 F.
  2. Mix together panko, feta, mustard, oil, dill, garlic, salt and pepper.
  3. Place the fish on parchment lined baking sheet and press the panko mixture on top.
  4. Bake in the preheated oven for 15 minutes, or until the fish is opaque and flaky, and the topping is starting to brown.
