Asparagus Snap Pea Pasta Salad

Serves: 4 meal servings, or 8 sides
Ingredients
  • 8 oz whole wheat orzo pasta
  • 2 cups trimmed asparagus
  • 2 cups chopped snap peas
  • ¼ cup red onion, diced
  • ¼ cup feta, crumbled (optional)
Dijon Vinaigrette
  • ¼ cup red wine vinegar
  • ¼ cup olive oil
  • 2 TBS Dijon mustard
  • 3 garlic cloves, minced
  • ½ tsp each: salt and black pepper
Instructions
  1. Cook orzo according to package instructions.
  2. Toss asparagus and snap peas into the pasta during the last 2 minutes of cooking to blanch. Drain well.
  3. Combine all ingredients for the Dijon vinaigrette. Toss the vinaigrette with the pasta mixture until evenly coated.
  4. Serve sprinkled with red onion and feta.
