High Protein Chocolate Chunk Muffins

Serves: 6 muffins
- ½ cup protein powder
- ½ cup oats
- ½ cup dark chocolate chunks, divided
- 1 TBS cocoa powder
- 1 tsp baking powder
- 1 egg, beaten
- 1 banana, smashed
- ½ cup applesauce
- 2 TBS milk of choice
- Preheat the oven to 325 F.
- Mix together the protein powder, oats, 6 TBS dark chocolate chunks, cocoa powder, and baking powder in a medium bowl.
- In another bowl mix together the egg, banana, applesauce, and milk.
- Mix the wet ingredients into the dry ingredients and stir until just combined.
- Line a muffin tin with 6 paper muffin cups and divide the batter equally among them. Top with the remaining 2 TBS chocolate chunks
- Bake in the preheated oven for 25 minutes, or until a toothpick inserted comes out clean.
These keep in the fridge for 7-10 days.
