These apple cinnamon quinoa breakfast bowls will have you cooking grains for breakfast all the time! This recipe is vegan, dairy-free and gluten free!

Ingredients
Single Serving
¼ cup quinoa
½ cup water
Pinch salt
1 small apple (5 oz)
1 tsp coconut oil
¼ tsp cinnamon
Maple syrup, to taste (1-3 tsp)
4 servings
1 cup quinoa
2 cups water
¼ tsp salt
4 small apples, or 2 large (20 oz total)
1 TBS coconut oil
1 tsp cinnamon
Maple syrup, to taste (1-4 TBS)
Instructions
Rinse quinoa well in a fine strainer. Combine quinoa with water and salt in a rice cooker, or on the stove top. Cook until the water is absorbed and the quinoa is tender, 12-15 minutes.
Meanwhile, core and slice apple(s). Melt coconut oil in a skillet, add the apple slices and saute until the apple starts to brown, stirring occasionally, about 5 minutes.
Mix cinnamon into cooked quinoa. Place quinoa and sauted apples in a bowl and drizzle with maple syrup.
