Vegetarian Taco Lunch Wraps

Serves: 2 small wraps or 1 serving
- 2 medium tortillas (8 inches, or the taco size)
- ½ cup refried beans
- ¼ cup shredded cheese (such as cheddar)
- ¼ cup red salsa
- 2 cups chopped romaine lettuce
- Spread refried beans over each tortilla.
- Top with shredded cheese, salsa, and lettuce. (Note: serve salsa on the side if you want a to-go lunch for later!)
- Roll up into a wrap, or eat taco style!
