Grilled Polenta with Fresh Tomato Relish

This grilled polenta with fresh tomato relish captures summer with a smoky polenta slices, and garden-fresh relish! Serve it as an appetizer or side!

Ingredients
  • 18 oz roll of cooked polenta
  • canola oil, for the grill
  • 1 medium tomato, diced
  • ¼ cup minced cilantro
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 3 turns on a grinder, each: sea salt and black pepper
  • Parmesan cheese, for serving (optional)
Instructions
  1. Slice polenta into 12½ inch slices and brush both sides of the slices with a splash of canola oil to keep them from sticking to the grill.
  2. Preheat grill on high until hot. Place oiled polenta slices on grill and cook 3-5 minutes per side or until dark grill mark appear.
  3. Meanwhile, mix together tomato, cilantro, garlic, olive oil, sea salt, and pepper to make the relish.
  4. Serve polenta slices with a dollop of relish and a pinch of shaved Parmesan, if using.
