Buffalo Blue Cheese Smashed Chickpea Toast

Ingredients
  • 2 slices whole wheat bread
  • ½ cup cooked chickpeas (from a can)
  • 2 TBS quality blue cheese, crumbled
  • 1½ TBS hot sauce (such as franks)
  • Pinch garlic granules or powder
Instructions
  1. Toast the bread until golden brown and crispy in a toaster.
  2. Meanwhile, coarsley smash chickpeas with a fork or avocado masher. Mix in blue cheese, hot sauce, and garlic granules.
  3. Heat in the microwave for 10-20 seconds, just enough to get the cheese a little metly.
  4. Spread onto the toast. Garnish with a drizzle of hot sauce, and a few crumbles of blue cheese if desired.
