Quick Vegetarian Red Curry

Quick Vegetarian Red Curry by Alison's AllspiceCurry is a staple dish in the vegetarian diet.  Curry simply means blended. Hence, most curry powders are a blend of spices and seasonings.  My quick vegetarian red curry uses garam masala curry powder.

Garam masala is a blend commonly used in Indian cuisine.  Northern Indian food seasons with dairy, while southern Indian food uses more coconut milk to flavor their curries.   Continue reading

Golden Potato and Black Lentil Kale Salad

Golden Potato and Black Lentil Kale Salad by Alison's AllspiceSometimes, when you try something new, you find a new thing to love.  That was me with this recipe, golden potato and black lentil kale salad.

I love kale salads.  Kale can be tough, but all you have to do is give it a little massage to soften it right up.  I also love black lentils, or beluga lentils, as they have a firm texture and a clean flavor (not earthy like brown lentils). Continue reading

Kale and Potato Frittata

Kale and Potato Frittata by Alison's AllspiceThis simple kale and potato frittata has become  standard lunch fair on Saturdays at my house.  Frittata’s are a great clean-out-the-fridge meal, but are also special enough to excite!

I love the combination of kale and potatoes in this frittata.  Potatoes make it hearty and filling, and kale adds nice color, as well as nutritional value!  Really any veggies will do, but this is my favorite, and I usually have the ingredients on hand. Continue reading

Creamy Garlic Potato Soup with 4 cloves per serving

Creamy Garlic Potato Soup by Alison's AllspiceMy husband adores garlic.  I use it in almost ever dish we make, but it’s rarely the main flavor component.  In this creamy garlic potato soup, I used four cloves per serving!

The garlic is added three different times, to add great garlicky flavor with every step.  First it’s sauted with some onion until caramelized, then I add more with the broth to simmer. Continue reading

Cajun Black Eyed Pea Sweet Potato Cakes

Cajun Black Eyed Pea Sweet Potato Cakes by Alison's AllspiceSo, black eyed peas have not always been my favorite food.  However, they are said to bring good luck to those who eat them on New Years Day!  I love to partake in fun traditions, therefore I decided to experiment with black eyed peas to find a delicious way to eat them.

The tradition comes from the southern United States, so I figured Cajun flavors would work well.  I love these Cajun black eyed pea sweet potato cakes, and plan to enjoy them for good luck in the new year! Continue reading

Five Minute Four Ingredient Homemade Gravy

Five Minute Four Ingredient Homemade Gravy by Alison's AllspiceFriends, I hope you didn’t over do it on the mashed potatoes and gravy over thanksgiving because I have a fantastic recipe for you.  This five minute four ingredient homemade gravy is so savory, and can be adapted for many diets.  It is made with broth or stock and can be made vegan, vegetarian, or omnivore!  Whatever broth you use will be the type of gravy you will have.  My mom always made gravy from drippings off a cut of meat, but there is not need for that with this recipe.  You can still enjoy a homemade gravy without needing to roast a whole bird, which makes it great for serving to a small crowd, or serving vegetarian gravy that everyone will enjoy!
