Roasted root vegetables are a wonderful staple of the season.  Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back.  I added one vegetable to this mix that is not a root vegetable: Brussels sprouts!  It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green! Trout Chowder

Chowder is the perfect soup for cold days.  We haven’t seen too much of winter here in southern Illinois yet, but the temperatures dropped this week, and it was time for chowder!  It’s creamy and filling and warming.  It will practically consume you with all of its comforting goodness.  Spoonful after spoonful.  Ready for chowder yet?

Portabella and Lentil Pot Pie

It is raining and cold outside today.  A perfect day for a rich and warming comfort food like pot pies.  I loved pot pies as a kid, which is why I consider them a total comfort food.  This version is made with mushrooms and lentils to make it hearty and filling.  Veggies like potatoes and carrots make it classic.  It will even work well as a vegetarian main dish at thanksgiving, for all your veggie friends and family!

Rosemary Roasted Potatoes

It’s finally November.  I have been reluctant this fall to get into the season.  However, Thanksgiving is on its way and it’s time to start testing recipes!  This recipe is a simple side dish that will do for Thanksgiving or Christmas.  Roasted potatoes are easy and delicious.  Adding rosemary adds a fresh element that works well with all your holiday dishes!
