I love comfort foods that are loaded full of veggies. You can feel like you are treating yourself, while you’re getting your quota of veggies for the day. It’s a total win-win scenario. Pot pies were a favorite meal of mine growing up, therefore this vegetable lentil pot pie fits the best of both worlds for me. It’s a total comfort food, and still very healthy. Continue reading
In the past few weeks, I have been surrounded by the joy of friends and family. As I sit down to write this post, with my friends and family in mind, I am realizing how quickly the holidays are approaching!! I like to over prepare for food events, with lots of research to find the best options for picky eaters, and special diets alike. I may not have any menu plans dreamed up yet, but at least I know my families leftovers will go to good use in today’s recipe, smoked trout fish cakes. Continue reading
Fish and potatoes are a classic combination that is tried and true. However, to make it an outstanding meal, the seasonings need to be spot on. I tried this recipe three times before I got the combination of seasonings just right. It is a simple dish, but the flavors are bold and meld well together. Brown sugar salmon and roasted potatoes with maple mustard dill sauce was an easy dinner that I put together on my flame-less grill. Continue reading
Enchiladas is one of those dishes that you can throw just about anything into, and it still comes out awesome. I filled these chard potato lentil enchiladas with extra produce from my CSA, and added some lentils for protein. I cover mine in my favorite salsa verde and top with cheddar cheese, so easy, and so yummy! Continue reading

I have a no waste attitude when it comes to food. I hate throwing out even the littlest bit of food just because it doesn’t have a purpose, or because I think there isn’t enough left to use. With a little bit of effort and planning you can prevent this kind of waste. Today’s Pizza Baked Potatoes was created because I had a small amount of pasta sauce that was not going to go down the drain. The recipe was so good that I made it multiple times and perfected the seasonings, and today I’m sharing it with you! Continue reading
Earlier this week I shared a recipe for Roasted Root Vegetables with Parmesan Wheat Berries. We loved this combo of veggies with creamy cheese and nutty wheat so much that I found another way to enjoy those flavors. These pockets are stuffed with lots of veggies, given a good smear of goat cheese, and topped with mustard-y glaze! Continue reading
Roasted root vegetables are a wonderful staple of the season. Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back. I added one vegetable to this mix that is not a root vegetable: Brussels sprouts! It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green! Continue reading

Chowder is the perfect soup for cold days. We haven’t seen too much of winter here in southern Illinois yet, but the temperatures dropped this week, and it was time for chowder! It’s creamy and filling and warming. It will practically consume you with all of its comforting goodness. Spoonful after spoonful. Ready for chowder yet?
It is raining and cold outside today. A perfect day for a rich and warming comfort food like pot pies. I loved pot pies as a kid, which is why I consider them a total comfort food. This version is made with mushrooms and lentils to make it hearty and filling. Veggies like potatoes and carrots make it classic. It will even work well as a vegetarian main dish at thanksgiving, for all your veggie friends and family!
It’s finally November. I have been reluctant this fall to get into the season. However, Thanksgiving is on its way and it’s time to start testing recipes! This recipe is a simple side dish that will do for Thanksgiving or Christmas. Roasted potatoes are easy and delicious. Adding rosemary adds a fresh element that works well with all your holiday dishes!
