Easy Shrimp Noodles with Cilantro

Easy Shrimp Noodles with Cilantro by Alison's AllspiceSometimes when I see special ingredients, I get super exicted about finding a fun new way to use them.  I found these forbidden rice noodles, and knew that they would be perfect for these easy shrimp noodles with cilantro!

You can certainly make this recipe with any kind of noodle.  The flavor won’t be that different, but I do like the contrast that it adds to the dish.  The pink shrimp look so inviting on the black noodles! Continue reading

Cherry Tomato Pasta Puttanesca

Cherry Tomato Pasta Puttanesca by Alison's AllspiceOctober is finally here, and the garden is starting to wind down.  It’s that time of year when I have more cherry tomatoes than I know what to do with!  This year I experimented with this cherry tomato pasta puttanesca.

Puttanesca is known as the poor man meal in early Italy.  It has simple ingredients that bring in big flavors. Canned tomatoes are more traditional, but I gave this simple Italian dish a fresh spin by using garden fresh cherry tomatoes. Continue reading

Cold Cucumber Crab Noodle Bowl

Cold Cucumber Crab Noodle Bowl by Alison's AllspiceThis cold dinner idea is perfect for summer.  We enjoyed this cold cucumber crab noodle bowl after mowing the lawn.  It filled us up without heating us up, and it only required 2 1/2 minutes of cooking!

The serving size on these bowls is on the large size.  I used this meal as  post-work out dinner, so lots of carbs and protein were appreciated.  However, the recipe as written could be split into 3 servings for a lighter meal. Continue reading

Cilantro Avocado Pesto Pasta

Cilantro Avocado Pesto Pasta by Alison's AllspiceCalling all avocado fans!!  If you’re like me, you buy avocados in the bag to the get the best deal.  This also means, that you have a lot of avocado to use.  This cilantro avocado pesto pasta recipe is so good, I ate it everyday last week to use up my bag of buttery avocado fruits!

In addition to avocados, I have totally fallen in love with chickpea pasta.  You could use any pasta in this recipe, but using chickpea pasta gives you a boost of protein, as well as fiber.  Two essentials that you need in your diet, that usually wouldn’t be high in a basic pasta dish. Lemon Caper Spaghetti with Chickpeas

Lemon Caper Spaghetti with Chickpeas by Alison's AllspiceOn most Saturdays, I find myself at home alone for lunch.  I usually try to go through the fridge and use up leftover ingredients.  Sometimes I do something I might never have tried otherwise, and end up loving it!  That was the case for this lemon caper spaghetti with chickpeas recipe.

This meal used up leftovers from my shrimp pistachio gremolata pasta dish.  I wanted to make a vegan and nut free version, but the dish was lacking protein.  Hence, chickpeas.  I gave them a quick pan fry like I do in this gyro bowl recipe, and viola!  Lunch is served. Continue reading

Chunky Tomato Orzo Soup

Chunky Tomato Orzo Soup by Alison's AllspiceWarmer weather is finally starting to show it’s face after a long winter.  However, I’m willing to bet that we have one last cold snap headed our way before summertime, and I’m ready with this chunky tomato orzo soup!

I have been dreaming of summer tomatoes, refusing to buy fresh at the store (they are just not as good).  Luckily, canned tomatoes pack great flavor, perfect for soup! Continue reading

Creamy Lemon Dill Orzo Soup

Creamy Lemon Dill Orzo Soup by Alison's AllspiceThis creamy lemon dill orzo soup recipe has a surprising ingredient.  When I see creamy soup recipes, I expect to see that some form of dairy makes it creamy.  Milk, sour cream, cheese, or all of the above, for example.

Instead, this recipe uses eggs to achieve its velvety, creamy texture.  For a long time I shied away from recipes that cook eggs by tempering them in hot liquid.  It sounds scary if you’ve never done it. Continue reading

Vegan Mushroom Stroganoff with Cashew Cream

Vegan Mushroom Stroganoff with Cashew Cream by Alison's AllspiceI have a few family members that eat dairy-free.  Over the holidays when we are all together, sometimes finding meals that fit into everyone’s diet is difficult. I shared this vegan mushroom stroganoff with cashew cream with my family this holiday season, and everyone enjoyed!

As a kid, mom always used to make stroganoff; it was a family favorite.  Around the dinner table, we all agreed that the cashew cream made a great substitute for the sour cream in our family recipe. Continue reading

Eggplant Basil Pasta Bake with Smoked Mozzarella

Eggplant Basil Pasta Bake with Smoked Mozzarella by Alison's AllspiceI absolutely love veggie pasta recipes.  My husband on the other hand, not so much.  When I made this eggplant basil pasta bake with smoked mozzarella for dinner, I was floored when he said, Wow, this is really good!

I love eggplant Parmesan, but it takes waaaaay too long to make on a weeknight.  I wanted to make a dish that reminded me of it, but was easier and faster to make.   Continue reading
