Creamy Pesto Arugula and Tomato Wraps by Alison's AllspiceI grow arugula in my garden every year.  It is such an easy plant to grow, it sprouts early, loves the colder months, and grows faster than any lettuce I have grown.  This also produces my favorite problem, I end up with lots of arugula to find interesting new ways to use. Therefore, today I am sharing my creamy pesto arugula and tomato wraps.

The creamy pesto sauce idea was developed by one of those lightbulb-moments.  I wanted to add protein to the wrap, but didn’t want roll-y chickpeas all over the place making the wrap difficult to eat. I opted for white beans instead of chickpeas, and decided to puree them into a flavorful spread, like hummus, but different. Continue reading

Savory Fajita Steel Cut Oats by Alison's AllspiceI have long read about savory oats, but it took me a long time to try them.  I was going through all the grains stashed in the back of the pantry, deciding what needed to be used first.  The steel cut oats were on the top of the list, and thus I made savory fajita steel cut oats!

The steel cut oats have a creamy texture in comparison to making a grain bowl with rice or quinoa.  Think of it like a polenta bowl instead, but made with wholesome oats. Continue reading

Smoked Trout Melts

Smoked Trout Melts by Alison's AllspiceCalling all trout fishermen and fisherwomen!  I have taken the classic tuna melt, and transformed it into a trout fishermans dreams, smoked trout melts.  It is ultra creamy, while still slightly smokey and sweet, and it’s ready for dinner in only 15 minutes!

I love to spend a whole day pulling out the smoker and loading it with trout and my homemade smoked tofu recipe, along with whatever else suits my fancy.  Smoked trout is a true delicacy, and I always make enough for plenty of leftovers! Continue reading

For me, making a dish healthy is not about subtracting “bad” ingredients, it’s about adding more “good” ingredients.  Therefore, I tried to load my recipe with lots of vegetables to balance with the the fat from the dairy. Continue reading

Salmon and Potato Au Gratin by Alison's Allspice My husband and I celebrated our first dating anniversary (many moons ago) at this little Scandinavian café at a vineyard that had a limited menu.  We both adore fish and tried the fish au gratin and fell in love with the dish!  Today I make salmon and potato au gratin at home for special occasions.

Au gratin is a special occasion dish as it is very rich, loaded with milk and cheese.  It is perfect for indulgent meals that you want to celebrate, including the holidays!  I have made it with both 2% milk and whole milk, and both work, but the whole milk is just a bit richer. Continue reading

Cherry Tomato Stewed Butter Beans over Toast by Alison's AllspiceAt the end of the gardening season, I am always bringing in loads of cherry tomatoes.  These little gems are such a treat because they are the sweetest tomato around.  I love turning them into rustic sauces, like I do in this cherry tomato stewed butter beans over toast recipe.

Butter beans are also known as lima beans.  They’re renaming is apt because these beans really do have a moist and buttery center.  You could also make this recipe with white beans, but don’t be intimidated by the large butter bean.  In my opinion, they are better! Continue reading

Cherry Tomato Shrimp and Grits

Cherry Tomato Shrimp and Grits by Alison's AllspiceShrimp and grits is one of the classic southern dishes that can be made so many different ways that no two recipes are alike.  I always try to add some vegetables for good measure, and these cherry tomato shrimp and grits are by far my favorite!

I have also tried shrimp and grits with mushrooms and with red bell pepper.  Both were delicious in their own right, but the sweet cherry tomatoes really compliment the sweetness of the shrimp and the sweetness of the corn. Continue reading
